Day 6: Muslitos de Pollo

As Spain are my favourites for the World Cup I thought it would be a nice idea to do one of my favourite Spanish recipes. Normally this recipe would be accompanied by other Spanish Tapas but it stands up as a meal by itself and unlike the Spanish performance today it will not disappoint.


Very simply it is Chicken Drumsticks cooked in red wine…..you cook the chicken until it is falling off the bone and you can serve it with rice or mashed potato. 

Serves 2 People

Ingredients:
Chicken Drumsticks – 6
Large onion
2 Tomatoes
3 garlic cloves
Salt & Pepper
Olive Oil – 2 tablespoons
Parsley
Glass of red wine (white wine can also be used)
Chicken Stock Cube
Some water


Cooking Utensils:

Big Deep Pot Pan
Frying pan
Food Processor
Chopping Board
Sharp Knife

Preparation

- Blitz Onions, garlic & parsley in food processor
- Chop tomato into small pieces

 

Cooking:

- Put Oil into a non-stick frying pan and bake chicken on a high heat until it starts to get brown 
- Tranfers to your thicken bottomed saucepan and turn down to a low heat and add onions, garlic, tomato, parsley and salt/pepper – Cook for 10 minutes
 

- Add the wine and chicken stock and let it cook slowly – place the lid on half way over saucepan
- Move regularly and add water if needed
 

- Cook for about one hour or till the chicken is falling off the bone


- Serve with white rice of mashed potatoes
