World Cup Kitchen will be a Dutch Cheese Sandwich…well a super deluxe version!
Very simply the sandwich is marinated tomatoes (olive oil, chilli & garlic) with fresh basil leaves and a white cheese (port salut, gruyere, fontina) all toasted on a pan on very thick fresh wholemeal bread.
Ingredients
50ml extra virgin olive oil
3 cloves of garlic
1 red chilli
1 tsp sea salt
Black Pepper
3 Tomatoes
4 large thick slices wholemeal bread
75g Cheese (port salut, fontina, gruyere)
16 basil leaves
25g butter
Cooking Utensils
Chopping board
Sharp Knife
Swallow bowl for tomatoes
Frying pan
Coating brush
Preparation
- Chop the Tomatoes up into thin even slices
- Finely chop your garlic and chilli
- Finely Slice your cheese

Preparation
- Chop the Tomatoes up into thin even slices
- Finely chop your garlic and chilli
- Finely Slice your cheese
Cooking
- In a shallow bowl add your olive oil, garlic, chilli and salt & pepper and mix well. Add your sliced tomatoes and marinate for 2 hours.
- Brush one side of the bread with some of the olive oil from the tomatoes
- Brush one side of the bread with some of the olive oil from the tomatoes
- Next place the cheese onto the oiled slices and then place your basil leaves
- Finally top with your tomatoes and a second slice of bread, oil side down.
- Melt half your butter in a frying pan over a medium heat and place down your 2 sandwiches. Cover with a plate and a weight on top and cook until sandwiches are golden brown on each side (remember to melt the butter again for the second side)
- Serve Hot with extra basil leaves and a light salad

I do realise that there is no Dutch cheese in my Broodje Kaas but you can of course put that in if you so wish!
