Day 14: Pepper & Pesto Pasta

Disaster for the blog.......Italy are out of the World Cup. I was so confident they would get thru that tonight I prepared something Italian that is quick and easy, not one of my more complex meals that I could of done. Ah well, at least Japan are thru....food wise that is.

Tonight I hadn't the time on other World Cup evenings so I needed something quick, easy and tasty to eat before the evening kick off.

Its a cream and wine sauce but this time I use onions, roast peppers & red pesto for the flavour. 

Serves 2      Cost of meal €5

Ingredients
2 chicken breasts
1 medium sized onion
1 clove of garlic
1 roasted red pepper (use jar of roasted peppers)
250g Pasta
Half a glass of white wine
150ml double cream
Salt & Pepper
Tbsp Brown Sugar
Large spoon of red pesto
Handful of pinenuts
Parmesan cheese

Cooking Utensils
Chopping board
Sharp knife
Cheese grate
Frying pan
Saucepan 

Preparation
- Slice chicken breast into very thin slices

 - Finely chop onion and garlic
- Chop roasted pepper into long stripes
- Roast Pinenuts on a hot frying pan and leave to cool

Cooking
- Quickly fry your chicken breast in a hot frying pan.

- Cook your pasta as per cooking instructions. Today I used some Pappardelle pasta
- Fry up your onion, garlic and then add your roasted pepper 
- Add some brown sugar to caramelise the above, if this is too sweet for you skip this step
- Add your cooked chicken
- Now add your white wine & let cook off for a few minutes




- Finally add your Red Pesto & Cream and cook on a medium heat for 5 minutes
 


- Serve with cooked pasta, roasted pinenuts and grated Parmesan
