Day 15: Tortilla de Patatas

Yet another one of my Tapas recipes for you to enjoy, this Spanish Tortilla recipe is very simple but the most important element to it is having a non-stick frying pan. As you are cooking the egg for long period on a low heat you want to be 100% sure that it will not stick to the pan otherwise you have a disaster on your hands.

This recipe is a perfect lunch/brunch on a weekend or serve with other accompanying tapas recipes.

Ingredients (for 8 servings)

Potatoes – 8 medium size or 2 packets of pre-cooked and sliced
10 eggs
3 onions (also spring onions can be used)
clove of garlic
Olive Oil

Cooking Utensils
Non Stick Frying Pan
Chopping board
Sharp knife

- If not using the pre-packed potatoes, peel and cut potatoes into blocks of 1.5 cm
- Whisk eggs, salt & a small amount of olive oil together
- Chop onions & garlic finely

- Add 3 table spoons of Olive oil to a Warm frying pan
- Add potatoes and onions/garlic to  the pan and cook very slowly – 

- Move regularly, it is best to cover pan at the start, as this will allow the potatoes to steam a little
- When potatoes are cooked take out of pan and add to the egg mixture
- Add a small amount of oil to the pan and then add the potato/egg mixture to it

- Bake eggs slowly (aprox 20 mins) and when the bottom layer is done flip it over (use a plate to do this)
- Remove Omlette & cut into desired sizes and serve
