Like a pancake batter the principle is the same and also very easy to get good results.
A pancake batter is a consistency of equal parts flour (plain) and milk (1 cup) with 1 egg, with a fritter it is a sweetened thicker batter so it is 1 cup flour (self-raising) to ½ cup milk with an egg with 2 table spoons of sugar.
Ingredients
1 cup self-raising flour
½ cup milk
1 egg
2 Tbsp sugar
Tsp Cinnamon
2 Bananas (the riper the banana the better)
Sunflower oil for frying

Preparation
- Sieve your flour into a mixing bowl
- Make a well in the middle and break in your egg
- Mix completely together with a wooden spoon
- Now add your sugar and mix completely
- Now add in half your milk & mix until it becomes a very thick lumpy batter
- Add the last of your milk and use your whisk to beat the mixture until it becomes a thick but smooth consistency – add a small bit more milk if you feel it needs it….
- Add your cinnamon & mix
- Cut Bananas into half & then in 3 even strips – you can cut them thicker if you want but then not all the banana will be cooked completely through
- Now add your bananas and toss completely in the mixture
- Leave to sit in a fridge if you have the time (batter reacts better if it allowed to sit and cool)

- Place an inch of oil in your frying pan
- Turn the oil up to a medium to high heat

- Tip: take a wooden spoon and place in the oil – when the wood bubbles around the edges the oil is ready
- To cook simply transfer the coated banana into the frying pan and let cook. (Be careful when placing the banana into the hot oil, use 2 forks to ease it gently into the oil)
- The left over batter will keep for 24 hours if you seal it so you can have it again tomorrow!!
- Turn after 90 seconds and repeat – keep a watchful eye always on the frying pan as the cooking times can be quicker depending on your oil temp

- Let the fritters sit on kitchen paper before serving
- Serve with a sprinkling of icing sugar and ice-cream
