Nothing quite beats a potato crust pie. That super creamy mashed potato with a crust will always compliment whatever is beneath it. When I have the time I would always try to prepare my Shepherds Pie recipe but the Sausage Pie is a very tasty quick & cheap alternative.
The Sausages are cooked slowly in a frying pan, you will then add to a onion & mushroom sauce that will go over the sausages before finally adding your creamy mashed potato. All is put under a hot grill to form a crispy crust. Again this is one of my meals in my €5 euro meal concept.

6 Large Sausages
1 Red onion
1 White onion
6 Mushrooms
1 Tomato
Clove of garlic
1 Devil Eye Chilli (optional)
250ml Beef Stock
1 heaped teaspoon white flour
1 Tbsp Tomato Puree
6 large potatoes
2 Spring Onions
100ml Cream
Knob of salted butter
Tbsp Olive oil
Tbsp Brown Sugar
1 Red onion
1 White onion
6 Mushrooms
1 Tomato

- Coarsely chop your onions & chop mushrooms into 1/4s
- Deseed tomato & chop only the flesh
- Finely chop garlic, spring onion & chilli

Tip: The key to cooking the perfect sausage is to cook on a low-miedium heat very slowly. Never prick the sausage as you want the juices to remain in the sausage
- Remove cooked sausages from pan and place back on a medium heat. Add your White onion and cook for 2-3 minutes. Then add your red onion and cook for a further 2-3 minutes
- Add your mushrooms, garlic & chilli (if using) and cook all together for 5 more minutes
- Turn heat up to high and add your brown sugar. You will caramelize the onions & mushrooms for aprox 1 minute

- Turn heat back down to medium heat and add your white flour and mix completely
- Add your beef stock, tomatoes & tomato puree and stir

- Cook on a medium heat for aprox 5 minutes until sauce becomes thick
- To mash potato add your cream & butter to your cooked potatoes with salt & pepper – half way thru mashing add your spring onion.
- Thinly slice each sausage into 3 pieces & line on the bottom of your oven dish
- Add on top your Onion & Mushroom sauce & on top add your mashed potato
- Melt butter and brush evenly on top of potato & place under a hot grill until crispy
