Cucumber & Chilli Dressing

This dressing is pure genius & incredibly simple to get together. All the tastes & flavours compliment each other perfectly. You have the sharpness of the vinegar with the sweetness of the sugar in the dressing liquid which has a hint of ginger & garlic thru it. The dressing is then poured over grated cucumber, chopped spring onion & chilli. So you have the refreshing taste of the cucumber with the spiciness of the chilli….its really a delicious combination.

The dressing keeps in your fridge for a week so can be used again & again until it is finished 


Ingredients
225ml rice vinegar(red wine vinegar also works here)
225ml water
125 gram sugar
2.5cm fresh root ginger
2 cloves of garlic
salt
One Cucumber 
6 spring onions
1 red chilli


Cooking Utensils
Chopping Board
Sharp Knife
Grater
Saucepan
Measuring jug
Weighing scales


Preparation 
- Grate cucumber
- Chop garlic and ginger coarsely
- Chop Spring onions
- Chop your red chilli – (if you like it spicier leave in the seeds, remove seeds for a less spicy dressing)


Cooking
- Boil the vinegar, water, sugar, garlic, salt & ginger together for about 2-3 minutes until sugar dissolves
- In a bowl place your grated cucumber, chopped spring onion & chilli 
- When liquid is cool  - sieve mixture (to remove the ginger and garlic) over the grated cucumber and the chopped spring onions and chillis
 
- Leave for about 2 hours to fuse together
- Dressing keeps for a week when stored in a sealed container in your fridge 


This dressing is delicious with Salads & Fish
