The below recipe is a super healthy alternative when you are looking for that something different with a piece of Salmon. What I love about it is that the Salmon is wrapped in a light filo pastry & will cook in the lime & herb marinate in such a way that everything fuses together for a delicious crispy salmon parcel of goodness. Personally I like to spice mine up with some devil eye chillis but if you do not like things spicy you can skip this step.
8 pieces of Filo pastry
2 pieces of Salmon Fillets (100g each aprox)
1 Spring onion
Handful of Coriander
Thumb size of fresh Ginger
2 cloves of garlic
1 devil-eye chilli
Zest of one lime
Juice of one lime
Salt & Pepper
25g Butter
Cooking utensils

- Wash & dry your salmon
- Finely chop your spring onion, ginger, chilli & coriander
- Finely chop your spring onion, ginger, chilli & coriander
- Combine all chopped ingredients in a small bowl with the zest & juice of one lime with your crushed garlic
- Melt your Butter

- Pre-heat oven to 190C
- Brush one side of the filo pastry with butter (if pastry is not long enough place 2 side by side)
- Place another filo pastry on top and brush with butter

- Place your Salmon at the end of the pastry and season with salt & pepper
- Now spoon over the lime & herb mixture
- Fold in sides of pastry and roll to seal
- Lightly butter pastry and place in an greased oven dish.
- Cook for 20-25 minutes or until pastry is golden brown
