Day 20: Pannekoeken (Pancakes)

Pancakes are most certainly not Dutch in their origin but when you live in a country with no apparent food culture you got to go with what you can get. The Dutch do however love their Pannenkoek especially at Dinner time, with Pannenkoek houses very popular offering a wide range of both sweet and savory options on pancakes.


Sweet Fillings:
- Lemon juice & Sugar
- Banana
- Baileys & Banana
- Stewed Apple (Applemoes)
- Nutella

- Dutch Stroop (sort of Maple syrup)

Savory Fillings: (you can combine anything really to whatever taste you like but a few ideas are here)
- Spinach & Ricotta
- Ham & Cheese
- Bolognese
- Tuna & Corn
- Cheese & Tomato
- Smoked Salmon & Cream Cheese
- Sausage & Onions
- Cheese & Potato

When making the pancakes I always use a cup of flour and a cup of milk with an egg….it makes it all super easy & quick

Ingredients

1 Cup Flour (110g)
1 Cup Milk (225ml)
1 Egg
Pinch of salt
Butter (for frying)

 

Cooking utensils
Large mixing bowl
Sieve
Wooden spoon
Whisk
Non-stick frying pan

 

Preparation
 

- Sieve flour & pinch of salt into a large mixing bowl
 

- Make a well in the middle of the flour and break your egg in
 

- Mix all together
 

- Now pour in half of your milk and continue to mix.
 

- Now pour in remainder of milk and use your whisk
- For best results leave your batter in the fridge to settle for any period up to 24 hours

 
Cooking
- Pre-heat a not stick frying pan to a medium-high heat, cook the pancake in a small amount of melted butter. Make sure the butter does not burn
- Tip: For the first pancake I always like to make a small one just to get the frying pan to the perfect temperature as the first pancake is never as good as the others

 
- You can cook your pancakes in 2 ways

cook for even amounts on both sides – then add your preheated filling later


cook for a short period on one side, turn over and then place your filling inside on one half, turn in half and cook for even amounts on both sides. This method will pre-heat your filling for you.

- Serve immediately
