Double Cheese Lavash Bread Pizza

Discovered this recipe today but they used Pita bread instead of Lavash bread. If you can get your hands on this Lebanese bread it is a absolute must as it really delicious. Like with any pizza you can mix up the toppings to whatever you wish. Personally I just love this sausage meat & spinach combination with cottage cheese, it is really light and delicious.



Serves 2

Ingredients


2 lebanese lavash breads
150g cottage cheese
2 chicken sausages
150g spinach
2 cloves garlic
1 chilli (optional)
1 small red onion
4 cherry tomatoes
Olive oil
Handful pinenuts
Grated mozzarella cheese
Half a lemon
Handful fresh basil
Handful Rocket salad leaves

Cooking utensils
Chopping board
Sharp knife
Wok
Wooden spoon
Food Processor
Pastry brush
Pizza knife
Large oven tray/dish
Greaseproof paper

Preparation

- Chop red onion into very thin strips
- Finely chop garlic & chilli
- Cut cherry tomatoes into quarters
- Remove sausage meat from the skin and make very small meat balls


- In a food processer blitz your cottage cheese with a squeeze of lemon and some black pepper

Preheat oven to 200C

Cooking

 
- Heat your some olive oil in a wok and cook your sausage meat at a medium/high heat for 5 minutes.
- Add your spinach/garlic/chilli and cook until all the spinach is wilted
- Add a squeeze of lemon when finished

- Place your lavash breads on your baking tray & first brush with olive oil, then smear with your cottage cheese mixture.

- Now add your sausage/spinach mix & then your cherry tomatoes, red onion and pinenuts
- Finally finish with a generous amount of mozzarella cheese and place in your preheated oven for about 12 minutes

- Remove from oven when cheese has melted and the edges of the bread are crispy
- Cut into triangles and serve with chopped basil & rocket leaves
