I stumbled onto this recipe last night when I had all of the above ingredients as leftovers and I wanted to have a light snack. The tart was all super easy to put together and the end result was absolutely delicious.
Note: when using the pastry be sure to use the Puff Pastry or when in NL it is the Roomboter type
Makes 2 Tarts
Ingredients
2 sheets of Puff pastry
100g goats cheese
6 cherry tomatoes
1 red onion
2 cloves garlic
Honey
Handful pinenuts
Splash Balsamic Vinegar
Olive Oil
Knob Butter
Salt & Pepper
Cooking Utensils
Chopping board
Sharp Knife
Oven dish
Frying pan
Wooden Spoon
Preparation
- Preheat oven to 190C
- Ensure pastry is defrosted
- Finely chop red onion & garlic
- Very thinly slice cherry tomatoes & goats cheese
- Grease your oven dish with your butter

Preparation
- Preheat oven to 190C
- Ensure pastry is defrosted
- Finely chop red onion & garlic
- Very thinly slice cherry tomatoes & goats cheese
- Grease your oven dish with your butter
Method/Cooking
- Fry your red onions/garlic on a medium heat for 7-10 minutes. In the last minute add in your drizzle of balsamic vinegar
- Place your Pastry on our own dish and lightly score with a knife 1cm from the edge

- Place in your preheated oven for 30 minutes.
Tip: after 15 minutes remove from oven to make sure the pastry is not sticking to the oven dish
