Greek Salad

After a short break after the World Cup Kitchen I am back with a very nice and tasty salad that is really versatile. It can be eaten as a lunch, with a BBQ, by itself as a dinner or to compliment your meal if you feel like something light & tasty.
The Dressing in the salad gives it a very tasty kick and it is all super easy to put together.   



Ingredients

1 medium sized Cucumber
½ a red, yellow & green pepper
1 red onion
4 Tomatoes
Block of Feta cheese
Fresh Basil
Dressing
4 Tbsp red wine vinegar
6 Tbsp extra virgin olive oil
2 Tbsp oregano (fresh if possible)
1 tsp salt
¼ tsp black pepper

Cooking utensils
Chopping Board
Sharp knife
Salad Bowl
Small jar for mixing dressing


Preparation

- Cut peppers into small even sized pieces
- Remove skin from your cucumber, cut into 1/4s and remove the inside of the cucumber. Cut into the same size as your peppers
- Remove the inside of your tomato and cut into even sized pieces
- Cut your red onion into thin slices
- Chop your feta into bite size chunks
- Finely chop your basil

Dressing

 - In a small jar combine all your dressing ingredients and close and shake until all mixed together
 


Combining
- Place all in a large salad bowl and mix all ingredients together
- Add your dressing and mix in completely

Serve….

Note: If you are making the salad in advance, just add the dressing, tomatoes & feta at the last moment.
