Goats Cheese, Red Onion & Tomato Tart

I stumbled onto this recipe last night when I had all of the above ingredients as leftovers and I wanted to have a light snack. The tart was all super easy to put together and the end result was absolutely delicious.

Carmelized Red Onion Tarts with Sausage, Pinenuts & Sage

The tarts are very simplistic in that they sausage meat, pine nuts & sage baked on a bed of carmelized onions. They are super easy to get together and the end result is delicious.

Double Cheese Lavash Bread Pizza

Discovered this recipe today but they used Pita bread instead of Lavash bread. If you can get your hands on this Lebanese bread it is a absolute must as it really delicious. Like with any pizza you can mix up the toppings to whatever you wish. Personally I just love this sausage meat & spinach combination with cottage cheese, it is really light and delicious.

Fish in TinFoil

Similar to the Red Snapper that I did on the BBQ, another great way to cook fish is to steam it in tin foil. I do it very differently when I use an oven in that I let the fish sit in some stock/white wine so that it will poach as well as steam when cooking.

Poulet à l'estragon (Chicken with Tarragon)

Group D:  France

I do love French cuisine and have cooked many French Recipes already. This time around I wanted something quick & simple that can become part of my weekly menu as I have found up until now that most of my French recipes are all weekend activities.

The below recipe was passionately explained to me by a French friend of mine and after cooking & eating it I can 100% advise this recipe to anyone. It is delicious, easy to make and done in super quick time. Basically by the time your rice is cooked you are ready to eat.

Russian Tomato Salad

Group A: Russia

The recipe below is super simple and is eaten in Russia mainly with stews. As you can see from the core ingredients it is a very fresh and crisp salad option.

Kure na Paprice (Chicken Paprikash)

GROUP A: Czech Republic

The best thing I have found with undertaking this journey into all of the Cuisines from the European Championships is the new techniques and recipes that I have learned along the way. This recipe is one of those. Normally when I find a recipe I always tweak it and give it that Food Devil twist but when it comes to this little project I purposely have tried to find very traditional recipes and then not change the techniques as then you can really learn something.

With this recipe I really just love its simplicity. Its just onions, bacon and chicken with some paprika & water. When chicken is cooked remove it and then mix in the sour cream/flour combination and you have a delicious gravy/sauce. I served it with potatoes. The Polish potato pancakes would also work really well here.

You really have to try this one, I know for me it will now become a regular in my Kitchen.

For the World Cup Kitchen I cooked a Slovakian Goulash Soup which was very very tasty

Prawn & Avocado Cocktail

This starter is an old favorite of mine. The Simplicity of it is such that it takes no time at all to get together. You can of course buy your sauce already made to make it even easier but in all fairness making the sauce yourself is also super easy and you really do taste the difference in my opinion.

Sauce recipe can be found here:

Irish Soda Bread

Soda Bread is one of those things I really do miss from back home. The recipe itself is super easy with the key ingredient being that of Bi-cardonate of Soda. In the past I have been unable to find it here in Amsterdam but a trip to an ex-pat shop was a success so happily I am able to make it again.

The recipe that I used is the one that my father used when I was a kid and I followed it to the letter. Modern versions of the recipe use butter milk and also add some porridge oats to the bread but to be perfectly honest the traditional way is easily the best. Also the whole process of getting the bread together takes about 5 minutes, so you really have no excuse not to try this.

Baked Tilapia

This recipe is incredibly simple. I was originally looking for a white fish recipe for on the BBQ but the weather did not oblige so I baked in the oven instead

Melted butter with lemon is brushed over your fish and finely chopped herbs are added…I used coriander from the garden. The cooked in a pre-heated 180C oven for aprox 10 minutes. Tonight I served with my cous cous salad but it will go with almost anything.

Parmesan Encrusted Fish

I have not done this recipe in ages and I just remembered it as I wanted to have a salad tonight but wanted some fish to go with it. It is like a common theme here at Food Devil but this is remarkably easy. Your fish is first coated in white flour and then egg white 7 finally grated parmesan cheese. Then it is shallow fried in hot oil for about 2/3 minutes each side. This recipe also works great with chicken breast/slices courgette/eggplant

Avocado with cottage cheese & black pepper

Its not often that you can post something that takes longer to write up than prepare & eat.

This is definitely one of those things and for people out there that say you cannot cook well start off with this as your starter and you will not go far wrong.

Poached Salmon in Cream & White Wine

This Pasta is a very welcome addition to my weekly menu as yet again it all can be gotton together in about 15 minutes. As the pasta takes about 10 minutes I generally start to cook the pasta after I have sautéed the onions and just before I add the brown sugar.

A good tip at the end it to add your cream to your cooked pasta first and add your onions & Salmon pieces when you serve the dish.

Macaroni with Cheese

This has been a while…..

I have recently returned from a very enjoyable and long holiday and I got to admit have taken some time to get back into my routine with cooking etc. I have however found myself trawling thru my old favourites from this site as a help to get me back into things

First up on my return is a quite legendary dish from the States that is amazingly simple to get together. One note on it when choosing your cheeses: take parmesan & mozzarella for definite but then you can choose whatever other grated cheese you prefer with those 2

Broccoli & Cherry Tomato Pasta

The simplicity in this dish is what really makes it so special. As part of my €5 meal concept this meal is less than €2 to get together once you have the ingredients in-house.

To prepare the dish it is just so simple and it all can be done in the time it takes to cook your pasta. You will flash fry small florets of broccoli in garlic & chilli. Then this will be added with chopped cherry tomato to cooked pasta and chopped fresh herbs (if you have some available). All served on a warm plate with grated parmesan on top.

Super Quick, Tasty & Cheap……really the perfect combination to any meal

Prawn and Chilli Linguine

This recipe is super quick, tasty and delicious.

Butterflied king prawns are quickly cooked in a hot pan with garlic & red chilli before being tossed in cooked linguine & rocket (rucula).

Korean Bulgogi

I made this recipe during the World Cup Kitchen in the summer but wanted to repost it as the photos back then I was never happy with.

Bulgogi is a marinated beef recipe, although other meats such as chicken and pork can also be used.

It is made from very thin slices of prime cut beef. The meat is marinated with a mixture of soy sauce, sugar, sesame oil & seeds, garlic & chilli. This is then combined with a selection of vegetables. I used onions, carrots, peppers, mushrooms & broccoli. (you can use of course other vegetables to your own taste)

Cucumber & Chilli Dressing

This dressing is pure genius & incredibly simple to get together. All the tastes & flavours compliment each other perfectly. You have the sharpness of the vinegar with the sweetness of the sugar in the dressing liquid which has a hint of ginger & garlic thru it. The dressing is then poured over grated cucumber, chopped spring onion & chilli. So you have the refreshing taste of the cucumber with the spiciness of the chilli….its really a delicious combination.

The dressing keeps in your fridge for a week so can be used again & again until it is finished

Quesadillas

This recipe is an old favourite of mine. Its just so easy & as well perfect for when you are having lots of people over for an evening in your house. You make up your cheese mixture keep it in the fridge, then cook when the people arrive or when they get hungry. Just keep going until the cheese mixture is finished. Add cooked shredded chicken or prawns to make different types.

I remember stumbling onto this recipe that was written to be cooked on a BBQ – you roll the tortillas up & wrap in 2 layers of tin foil and place on a warm BBQ. It works well but tends to be very messy when eating.

What I have attached below is the original quesadilla recipe – Quesadilla in Spanish means cheesy tortilla and in practise it is a glorified cheese sandwich. You can really add whatever it is you like to the below basic ingredients – if you do not like one of them remove and add what you do like.

Lime & Coriander Salmon Filo Parcels

The below recipe is a super healthy alternative when you are looking for that something different with a piece of Salmon. What I love about it is that the Salmon is wrapped in a light filo pastry & will cook in the lime & herb marinate in such a way that everything fuses together for a delicious crispy salmon parcel of goodness. Personally I like to spice mine up with some devil eye chillis but if you do not like things spicy you can skip this step.

All is cooked in a hot oven & can be served with your choice of sides.
