Lamb Potato & Caramelized Onion Pies with chilli, coriander & ginger


Every now & again you cook something and you just sit there open mouthed looking at the other person eating saying a few things that I cannot really repeat here. These Pies are one of those moments…..I said GOD DAM

Been pretty addicted to the whole pie making business ever since I bought my 6 large muffin baking tray. So far I have cooked Steak Mushroom & Onion pies, Chicken & Leek Pies, Chicken Curry Pies & also Potato & Roasted Vegetable Mini Quiches. This time out I wanted to cook something with lamb & Chilli as I had a friend over for dinner who liked all of the above so we were in for a treat.

The principle behind this pie is identical in method to the Steak/Mushroom pie but this time I used lamb pieces. I caramelized the onion in brown sugar and I also added 3 green devil eye chillis to give the sauce a real punch. Also in the sauce added some grated fresh ginger root & fresh coriander which really compliments all the flavours going on.

Carmelized Red Onion Tarts with Sausage, Pinenuts & Sage

The tarts are very simplistic in that they sausage meat, pine nuts & sage baked on a bed of carmelized onions. They are super easy to get together and the end result is delicious.

Smoked Salmon & Prawn Pies

I came up with this recipe after a couple of times making my Salmon in Cream & White Wine. I have said already many times that the Pies that are on Food Devil are very tasty. Especially the Lamb Potato & Caramelized Onion Pies with chilli, coriander & ginger if you have not tried these you really have too.

But onto this post. I wanted to make a Fish pie and I also wanted to make it in Cream & White wine so I came up with the below recipe. In the pie you have poached Tiger Prawns and when the pie in placed into the oven the cream/wine & leek sauce is poured over smoked salmon so that will also poach during the cooking process. By using frozen pastry it all makes it super easy and quick and the end results are super tasty.

Potato & Roast Vegetable Mini Quiches

In my recent post regarding 'the €5 meal' I realized that the Quiche recipe I used cost €7 to make & the only reason for this was that I was using a larger baking dish for 3-4 people. In recent months I have become addicted to Pastry Pies so last night I wanted to try and make my own individual quiches, when made this way are considerly cheaper and really tasty as all of the flavours are condensed into individual servings.

What I decided to do this time is a Vegetarian Quiche with Potato & Roast vegetables and I served it with a light salad

Steak Mushroom & Onion Pies


Finally the search for a suitable meat pie casing has come to an end. I combed many a website for the perfect one but in the end I found a very large muffin baking tray, it worked perfectly. The beauty of this method is that you can buy sheets of frozen pastry (flaky puff pastry) that fit perfectly into each meat pie so that all you need to use is different meat sauces as the pastry is easily available in your freezer. You want to find a pastry that is butter based & not oil/yeast based, this pastry will give the pie a beautiful flaky texture.

Previously I have made a Chicken & Leek Pie during the World Cup Kitchen but this time I wanted to make a more traditional meat pie filling. I went for a Steak Mushroom & Onion Pie. The key when making the meat sauce is: more time the better. In the recipe I say cook it for 2.5 hours but the longer the better. Turn the sauce temperature right down and let the sauce stew away would be the best philosophy. Let the mixture cool completely before you add it into the Pastry casings.

World Cup Kitchen is an Australian Meat Pie -  a Chicken & Leek pie


When I lived in Australia the one thing I loved more than anything was their meat pies. Shakespeare Pies in Newtown, Sydney was a regular of mine and since I have returned to Europe I do miss the widespread availability of a good meat pie.

Therefore it was logical that in Australia's first game I would try to best create a Aussie Pie. They are best prepared in individual pie dishes but I have looked all over Amsterdam for them but with no success, so I just prepared them in a larger baking tray/dish.
