Stuffed Bell Peppers with Minced Beef


The title to this recipe does not really do this beef mixture justice. I have taken the combination of garlic, onion & courgette and married that with a touch of white wine, tomato puree & some delicious Hungarian paprika powder I have. 

I then take the already roasting peppers and line with fresh basil & pinenuts. Add back the beef mixture, some more pine nuts and top with grated cheese. Pop back in the oven and away you go….it really is delicous





Serves 2
 

Ingredients
2 red bell peppers
300g minced beef
2 small onions
¼ of a courgette
1 large clove of garlic
1 chilli (optional)
6 cherry tomatoes
Small tin of tomato puree
Small glass of wine wine
4 large basil leaves
Small handful of Coriander
Tsp paprika powder
Handful of pinenuts
Grated Cheese
Knob of butter & Olive Oil
 
Cooking Utensils 
Oven Dish
Chopping Board
Sharp Knife
Non-Stick Medium sized frying pan

PRE-HEAT oven to 180C

Preparation
- Cut Peppers in half and deseed
- Finely chop onions, courgette, garlic, chilli & coriander
- Cut your cherry tomatoes into quarters

Cooking
- Rub olive oil over your peppers and place in the bottom tray of your oven
- Place your frying pan on to medium high heat and cook your mince until it is completely brown. Remove beef from pan strain excess water from meat
- Place pan back on medium high heat and melt your butter & add oil to prevent butter burning.  


- Add onions and cook for 2 minutes
- Then add your courgette, garlic & chilli and cook for another 2 minutes
- Now add your cooked mince and cook together for again 2 minutes
 
- Now add your white wine and let the wine simmer and absorb into the mixture.
- Add your tomato puree, paprika & cherry tomatoes and stir in completely into mixture
- As a final touch add your chopped coriander


- Remove your peppers from the oven and place one basil leaf in each one with also some pinenuts
- Spoon in a healthy serving of your beef into each pepper and add some pinenuts and grated cheese

- Place back in your oven and cook for 5-7 minutes
- Serve with a light salad
